MEXICAN MEATLOAF

 

As the temperatures outside drop, I find myself craving spicy food that warms the body from the inside out. One of my favorite go-to recipes is an easy adaptation of the meatloaf my mother used to make when I was a child. To spice it up, I substitute salsa for the catsup in her recipe as well as taco seasoning spices for the salt and pepper. I cook with organic ingredients as much as possible.  For the meatloaf I use the organic salsa, ground beef, and eggs from Costco. The organic oatmeal is from Kroger,  and the organic spices are from Kroger and Swanson. (Hint: sign up for Swanson’s emails and stock up on spices during their sales).

Mexican Meatloaf

Ingredients:
1.3 lbs. lean ground beef
1 cup salsa
1 cup oats
2 eggs, beaten
1 envelope Taco Seasoning Mix or make your own with the Taco Seasoning Recipe below.

Taco Seasoning:

1/2 tsp Chili Powder
1/2 tsp Paprika
1/2 tsp Crushed Red Pepper
1/4 tsp Garlic Powder
1/4 tsp Onion Powder
1/4 tsp Dried Oregano
1/4 tsp Black Pepper

Directions:
Combine salsa, oats, eggs and seasonings in a large bowl. Add the lean ground beef to the mixture and mix well. If necessary, coat loaf pan with non-stick spray. Put mixture in pan.
Bake at 350 degrees for 1 hour or until the meatloaf is 180 degrees.
After baking, sprinkle with shredded cheese and return to oven long enough to melt cheese. If desired, garnish with sour cream and extra salsa. Serve with nacho chips, refried or black beans, and Mexican rice.
