SUGAR COOKIES

Preheat oven to 375 degrees

Ingredients:

1 1/2 c. sifted confectioner sugar

1 c. butter

1 egg

1 t. vanilla

1/2 t. almond flavoring

2 1/2 c. sifted all-purpose flour

1 t. cream of tartar

1 t. baking soda

Directions:

Cream sugar and butter, add egg, vanilla and almond flavoring.

Mix well.

Sift the dry ingredients together and stir in the wet ingredients.

Refrigerate 2-3 hours.

Take a teaspoon full and roll it into a ball.

Press down with a glass and bake for 7-8 minutes on a lightly greased pan.

BUTTERSCOTCH BROWNIES

Preheat oven to 350 degrees.

Ingredients:

1/4 c. butter, margarine, shortening, or vegetable oil

1 c. light brown sugar, packed

1 egg

*3/4 c. all-purpose flour

*1 t. baking powder

*1/2 t. salt

1/2 t. vanilla

1/2 c. coarsely chopped walnuts

Directions:

If using butter, margarine, or shortening, melt over low heat. Remove from the heat; stir in the sugar until blended. Cool.

If using oil, just blend oil and sugar.

Stir in egg.

Measure flour by dipping method or by sifting.

Stir flour, baking powder, and salt together. Blend in the sugar mixture.

Mix in vanilla and walnuts.

Spread in a well-greased square pan, 8x8x2.

Bake for 25 minutes.

Do not overbake.

Cut into bars while warm

Makes 18 bars. 2 1/2×1)

*Note: If using self-rising flour, omit salt; reduce baking powder to 1/2 t.
